Zaytinya, the latest addition to the Las Vegas culinary scene by renowned chef José Andrés, has officially opened its doors at the Forum Shops at Caesars. The restaurant, inspired by the rich culinary heritage of Greece, Lebanon, and Turkey, promises to deliver a unique Eastern Mediterranean dining experience. The name “Zaytinya” translates to “olive oil” in Turkish and is the title of Chef Andrés’ upcoming cookbook featuring a variety of Mediterranean recipes.
The restaurant’s menu, curated by head chef Stephanie Martinez, includes a variety of mezze and main dishes. Diners can enjoy seasonal salads, spanakopita, labneh, and baba ganoush, as well as inventive mezze like spicy soujouk sausage with kasar cheese and flatbread, or grilled octopus Santorini. Main courses include dishes such as grilled lamb chops with Tangier spice and spring pea tzatziki.
Zaytinya’s beverage program is equally innovative, featuring creations like the Minoan Sour with Spanish olive oil and egg white, and the Ancient Olive Martini, which uses a fat-washing technique for a unique flavor profile.
The restaurant spans 8,600 square feet and is designed with large oak doors, mosaic tiles, and elements inspired by the Greek evil eye. The original Zaytinya opened in Washington, D.C., in 2002, with additional locations in New York City, South Beach, Florida, and Culver City, California.
Zaytinya Las Vegas is open from 5 to 9 p.m. Sunday through Thursday and 5 to 10 p.m. on Fridays and Saturdays. More information is available at zaytinya.com.
