Gymkhana is reportedly set to replace the closed Julian Serrano Tapas at the Aria on the Las Vegas Strip, with a planned completion date in fall 2025. Clark County building permit records show a $4 million restaurant project at the Aria, matching the same contractor and space number as the details seen by the Las Vegas Review-Journal.
There is speculation about whether Gymkhana refers to the acclaimed Gymkhana restaurant in London, known for its Indian cuisine and two Michelin stars. The London restaurant is yet to comment on a possible Las Vegas location. Alternatively, Gymkhana might be a temporary code name for the project, a common practice among gaming properties.
The closure of Julian Serrano Tapas came after more than 15 years of operation, and followed the August 2024 closing of Serrano’s Picasso at Bellagio, which had been open for over 25 years. MGM Resorts International has not provided any comments on the new development.
