The concept of food halls has evolved significantly since the opening of Block 16 at The Cosmopolitan, becoming a staple on the Las Vegas Strip. These venues have replaced traditional buffets with a variety of culinary offerings. The latest addition, Via Via at The Venetian, introduces five new-to-market concepts, alongside new locations for popular eateries like All’Antico Vinaio and B.S. Taqueria. Here’s a guide to what you can try at each of the new spots:

  • Fried Bologna Sandwich

Offered by Chef Mason Hereford, this sandwich blends New Orleans flavors and is a staple at both Molly’s Rise and Shine and Turkey and the Wolf. Ingredients include Leighann’s bologna, Via’s Mom’s hot mustard, potato chips, shrettuce, Duke’s Mayo, and American cheese on big toast.

  • Tokyo Shio

Chef Ivan Orkin’s Tokyo Shio is a ramen dish combining sea salts, dashi, chicken broth, shoyu-glazed chashu, a soft egg, and roasted tomato.

From Chef Johnny Ray Zone, known for his experience with renowned chefs, The Sando offers Nashville hot chicken with various heat levels, served on a butter bun with comeback sauce, pickles, and slaw.

Created by Scarr Pimentel, this pizza features beef pepperoni and jalapenos, topped with Mike’s Hot Honey, made with all-natural ingredients and stone-milled flour.
